Pressure Change Technology (PCT) is a non-thermal processing method designed specifically for liquid foods and biological suspensions. It safely inactivates microbes and enzymes without the use of heat.

Pressure Change Technology (PCT) is a non-thermal processing method designed specifically for liquid foods and biological suspensions. It safely inactivates microbes and enzymes without the use of heat.

During processing, liquids or suspensions are exposed to moderate pressure and low temperatures in the presence of an inert gas such as nitrogen. A rapid pressure release causes the gas to expand inside cells, gently disrupting them.

The result is effective cold pasteurization for liquid foods and efficient cell disruption for biotechnology applications—while preserving natural flavor, nutrients, and the integrity of valuable bioactive compounds.
